Dairy and gluten free cookies with chocolate and nuts

I’m not starving myself!

When say to people I’m on gluten and dairy free diet they are like ‘Oh My God! What do you eat? Grass?!’ Really! When I was visiting my GrandmotherĀ (you know how what does it mean right? lots of food. Fat food) first time after I’ve started my diet she was running like a crazy and asking me what I will be eating. Because in my Grandmother’s house is one simple rules: you need to eat (something). Doesn’t matter what but you can’t go away with an empty stomach. She was kept asking me if I can eat sugar or bananas. It was really hilarious. I don’t understand why people think that I’m starving myself. I still can eat everything but with proper ingredients.

I can even eat desserts!

Who doesn’t love sweet desserts? If I would be not able to eat ice creams, muffins, chocolate or cakes I know I would suffer very bad šŸ˜› Desserts are essential to life šŸ™‚ Mostly I need to prepare them by myself which is even more satisfied. I love baking. Definitely more than cooking. Mostly I need to improvise because I don’t know if almond milk will work same as cow milk. Also, I can’t use any wheat flour, butter or milk chocolate.

This time I craved for cookies with chocolate and nuts. I made them dairy and gluten-free and I need to say that was the best cookies I’ve ever eaten. Even my son and my husband ate them without any bad comments. So if someone will tell you that dairy and gluten-free meals are not tasty it’s mean that he never tried them.

The recipe is coming!

I don’t want to keep you waiting so here you are the recipe for my favourite gluten and dairy free cookies with chocolate and nuts.


50g unsalted peanuts
50g dark chocolate (min 70% cocoa)
100g soft butter (dairy-free butter)
1 egg
50g peanut butter (I always use made from peanuts in 100% with no sugar or salt added)
125g sugar (I used brown sugar)
175g oats (obviously gluten-free oats)
80g flour (I used self-rising gluten-freeĀ flour)
1tsp baking powder
1tsp cinnamon


Preheat oven to 180 Ā°C.Ā Ā Line baking sheets with parchment paper and set aside.

In a medium bowl, whisk together butter, egg, peanut butter and sugar.

Add oats, flour, baking powder and cinnamon. Mix it.

Add grated chocolate and chopped peanuts. Mix all together.

Use a cookie scoop (or ice cream scooper) to portion out cookie dough. Ā Place cookie balls on the prepared baking sheet and now make them flatter, leave about 3-4 cm between cookies to allow for spreading.

Bake for 15- 20 minutes.Ā Let cool for about 30 minutes.
