Super easy 5 ingredients vegan chocolate cake
Being on dairy-free and gluten-free diet is not easy. And when you add to it vegetarian diet there is quite a big limitation in food. I thought like that at the beginning of my journey. But there are so many possibilities which I was able to discover. I eat so delicious meals that my husband who is not vegan or vegetarian enjoys them with me. Making desserts are my favourite part of cooking experiments. Lately, I discovered two lovely guys who are vegan and they create such tasty recipes I just love to follow most of them. So before I will start to share my favourite chocolate vegan recipe I would like to give a credit to The Happy Pear . I found this recipe in their 5 ingredients baking block. So, as you can imagine you don’t a lot of products plus it’s super easy to make.
For me, it’s epic cake and I will make it very often at my home. I can’t say or promise it’s a healthy dessert but definitely, it’s delicious and indulgent. You can make it for any occasions. I believe it will be good even as a birthday cake with some nice decorations.
What you need to make this vegan chocolate cake
8-inch cake tin
sieve (not mandatory)
baking paper (not mandatory I used vegan butter to smear it over the base)
Whisk or wooden spoon
Ingredients for our easy vegan chocolate cake
200g all-purpose white flour
70g cocoa powder
1 tbsp baking powder
180g coconut sugar or any other sugar you wish to use like caster or muscovado
130g sunflower oil
500g boiling water
Firstly preheat your oven to 180C. Now you can sieve your flour and cocoa powder into a mixing bowl. But if you don’t have a sieve don’t worry. You still can make this delicious vegan chocolate cake. I did not use a sieve and my cake came out perfectly. Add baking powder and sugar and mix it well together.
Now it’s time for wet ingredients. Add the oil and boiling water and fold all ingredients into the smooth cake batter.
You can line a springform cake tin with baking paper but it’s not a must. I couldn’t get a baking paper for a few weeks (lockdown problems) so I had to make the cake without it. Simply spread vegan butter over the base and it worked for me.
Pour the batter into the cake tin, put in the oven for 30 minutes.
Remove and leave to cool before adding frosting.
To make a frosting I used 100grams of 70 % dark chocolate and 100grams of double vegan cream. First I put pieces of chocolate in a bowl, melt it and combine with double cream.
When it cool down and set I put on the top strawberries.
So far it’s my favourite vegan chocolate cake. It fits perfectly in my dairy-free diet. It’s absolutely amazing and I can recommend this cake absolutely for everyone. Not only vegan or people who can’t eat dairy. My son and my husband where chuffed. My man was surprised that I used only a few ingredients and I made a cake without eggs and milk or milk alternative. Also, I make that cake when my Mom was visiting us and she couldn’t believe it’s a vegan cake!
