I’m gluten and dairy intolerant but as my blood tests said mostly dairy. It’s really difficult to find products which are both gluten and dairy free. If something is without milk it’s highly probable that it will contain gluten. So I started to looking for some recipes which I can prepare by myself without worries that it will be harmful for me. I know that nowadays more and more people are on gluten or dairy diet so I decided to share my recipes. Obviously my husband is eating almost everything what he will find in a fridge so I need to cook for him as well. As you can simply guess you will find here also other recipes.
My first recipe which I share with you is really simple and tasty. If you have kids which don’t like spinach or other green vegetables you can tell them that you will prepare Shrek’s, Hulk’s (etc) pancakes and I’m sure they will love it. Even my nearly 1 year old son was eating them (from my plate:P).
What you need
1 egg
almond milk 20 ml
handful of spinach
gluten free flour 1/2 cup
water 100 ml
handful of nuts
pinch of salt
tahini pasta or peanut butter
coconut oil
Directions
1. Blend together spinach, nuts and water.
2. Place the flour and a pinch of salt in a bowl.
3. Place green mixture to the bowl with flour and salt and mix it together.
4. Add egg and milk and mix it again.
5. Place teaspoon of coconut oil on preheated pan.
5. Pour mixture into the pan. I was using my soup ladle and I’ve got 3 pancakes.
6. Remember to cook until small bubbles form and don’t re-close. Flip and cook for an additional 2 minutes, or until cooked through. Repeat with all batter.
7. Serve with peanut butter or with tahini pasta. You can add your favorite toppings.

27 March 2017 at 09:39I actually never thought about that before. It really must be a challenge to find gluten AND dairy free. I love the idea of Hulk pancakes though lol that is too cute. They look pretty good to me, but I’ve always had more of a taste for that kind of thing lol. I bet the tahini paste makes them super good.
