We crave summer!
I love summer! But it’s not only me, right? Everyone loves summer. People are so much happier when that season comes around. Because it’s mean more quality time with people you love, being outside, swimming, running around, laughing till late nights. Just having fun. But in summer it’s not only leisure. It’s also a FOOD. Delicious lovely food. Summer eating is the best. You don’t even have to feel guilty about all of the extra calories because you are so active during that time and you will burn it in a minute 🙂
Summer FOOD
For me the best food for summer is waffles. I could eat them all day. So I needed a recipe for light waffles to eat them without guilt. Also, as I’m intolerant they need to be dairy-free and gluten-free. And guess what?! I found exactly what I needed. This recipe is perfect for me, for vegans and everyone who is on a diet and needs a little bit of pleasure.
Gluten-free and dairy-free waffles recipe
This recipe is literally the simplest one. You just need 4 ingredients. And I’m sure two of them you definitely have at home. If you are on a gluten-free and dairy-free diet it’s more possible that you have all of them.
Ingredients:
oat flakes (gluten-free) 220g
almond/coconut milk 500g
brown sugar 50g (you can add less if you want to make a ‘fit waffles’)
rapeseed oil 10g
Method:
1. Preheat waffle maker
2. Mix all ingredients in a blender until smooth. You need to let the batter rest for about 20 minutes. It will give the oats time to soak up of the moisture.
3. Spray preheated waffle iron with cooking spray
4. Pour mix onto the hot waffle iron.
5. Cook until golden brown
6. Serve hot with a topping of your choice 🙂

I like the most with my homemade strawberry jam.
You should get 6 delicious waffles with that recipe. Each waffle contains about 190 kcal. You can eat them for breakfast or whenever you want:) It depends on you what topping you will add to them. I’m sure if you will serve it on any summer party everyone will love them. It doesn’t matter if someone likes/doesn’t like gluten or dairy.

Ohhhh this is a wonderful recipe! I can’t wait for the weekend to arrive and try it <3 breakfast on weekends are always a cheerful time to sit down and really enjoy some good food in this household (vs. just coffee during the week) so I'll be happy to prepare these waffles and think of you 😀
