Tasty coconut mini pancakes

Coconut pancakes are gluten and dairy free

If you’re looking for something tasty and healthy you need to try to prepare those mini pancakes. As a Mom, I know that sometimes we don’t have time for cooking different meals every day. Obviously, when we have children we always try to do something healthy. My pancakes do not contain any preservatives, palm oil or colorings. Plus, as most of my recipes, they are dairy and gluten free. So they are perfect for the whole family even our kids. And what you will like the most You can do them in 5 minutes and you don’t need a lot of ingredients.

What you will need:

2 eggs
a handful of blueberries or raspberries
2 tbsp coconut flour
1 tsp coconut oil
2 tsp honey


1. Blend together eggs, honey, flour and fruits.

Our mixture should look like that

2. Place teaspoon of coconut oil on the preheated pan.

3. Pour mixture into the pan. You can decide how big pancakes you want. Normally you should get 6-7 mini pancakes. I was using my plastic ladle

4. Flip and cook for an additional 2 minutes, or until cooked through. Repeat with all batter.

5. Serve with fruits or your other favorite toppings.

I love those mini pancakes because I can give them to my son as a dessert and I don’t need to afraid that it will harm him. They are tasty and healthy so that’s everything that you want for your family.
